Abstract:
Agaricus bisporus is an edible fungus with a long-standing history of clinical use in traditional medicine and is widely employed as a medicinal food for the management of various diseases. Recent studies have demonstrated that polysaccharides from A. bisporus are key bioactive macromolecules responsible for its health-related effects. A. bisporus polysaccharides (ABPs) exhibit considerable potential in the prevention and management of diverse pathological conditions. This review systematically summarizes recent advances in ABPs, including extraction and purification methods, structural characteristics, biological activities, structure-activity relationships, and applications in the food and agricultural sectors. Particular focus is placed on their therapeutic potential and health-promoting properties in the context of medical and functional food development. These findings contribute to a more comprehensive understanding of ABPs and offer a scientific foundation for their rational application.
