Introduction:
This study analyses the use of an application of artificial intelligence (AI) in the food chain, specifically for the development of a food product. AI offers, as an advanced technological development tool, to improve the efficiency, sustainability and safety of food systems. A case is considered for the development of a food product based on ensuring the learning and repository of the entire regulatory compendium that covers the mandatory and voluntary parameters of food and beverage labelling, to develop a cholesterol-lowering drink by creating the trade or fancy name, the sales name, the composition of ingredients, the nutritional value and the health claims. The descriptive algorithm has been created that has allowed to innovate in everything related to a drink that helps to reduce cholesterol under existing scientific and regulatory criteria in the European Union. Chat GPT is able to generate all the information and data from a descriptive algorithm created specifically for a food product with the commercial name of CardioFit Plus Functional Drink for Cholesterol Control, which would comply with the legal requirements established in the European Union. AI can be applied, with learning, repository and descriptive algorithms correct for use at various stages of the food chain, highlighting the benefits and challenges associated with creating descriptive algorithms that help generate more scientific, technical and analytical knowledge, as well as work on research, development and innovation and quality parameters. The impact of AI on reducing food waste and residue, product traceability and food safety is also explored. It can also be used for the analysis and assessment of future trends and prospects for technological development in the agri-food sector.
