Summary

Soluble corn fiber (SCGAs) show thermo-reversible behavior and low digestibility, enhancing cooked rice properties. These functional fibers increase resistant starch (RS) and slowly digestible starch (SDS) content, potentially lowering the glycemic index in foods.
