Recent perspectives on the biosynthesis of galacto-oligosaccharides: A systematic review and meta-analysis

Abstract:
This study presents the first systematic review and meta-analysis on the biosynthesis of galacto-oligosaccharides (GOS), integrating data from 104 articles published between 2018 and 2024 to provide a detailed and quantitative overview of the most efficient processes. Optimal parameters for GOS biosynthesis include the use of β-galactosidase from Bacillus circulans or Aspergillus oryzae in a matrix containing 30-50 % (w/v) lactose, under the enzyme's optimal pH and temperature conditions. As future perspectives, utilizing lactose-containing dairy by-products for GOS production represents a promising strategy for enhancing the environmental and economic sustainability of the dairy industry. Given the market potential of these prebiotics, which have broad applications in functional foods and beverages, this systematic review will assist in determining the optimal operational conditions for GOS biosynthesis and quantification.
