Abstract:
The aim of this study was to investigate the changes in protein oxidation, lipid oxidation, and volatile compounds in the longissimus dorsi muscle of Tan sheep during postmortem aging over a period of 0-144 h. The results indicated that as the aging time increased, the protein carbonyl content significantly rose from 0.005 μmol/g to 0.036 μmol/g, while the total sulfhydryl content decreased from 2.10 μmol/g to 1.14 μmol/g. Furthermore, malondialdehyde (MDA) levels increased from 0.03 mg/kg to 0.13 mg/kg. There was an increase in saturated fatty acids (SFAs) and a decrease in unsaturated fatty acids (UFAs). A total of 56 volatile organic compounds (VOCs) were identified, with notable changes in aldehydes, alcohols, and esters, which peaked at 48 h. These results demonstrate a strong relationship between oxidative changes and flavor development, offering a theoretical foundation for enhancing meat aging methods.
