Pt/Au-decorated Fe-N-C nanozyme sensor array for discrimination of tea polyphenol monomers

The composition and content of tea polyphenol monomers critically affect the flavour and quality of tea beverages, but their structural similarity hinders effective discrimination. In this study, a new type of composite nanomaterial with high peroxidase (POD)-mimicking activity was synthesized by in-situ reduction of noble metal nanoparticles (Pt or Au NPs) on iron‑nitrogen-doped carbon microflowers (Fe-N-C MFs). To discriminate four tea polyphenol monomers, a tri-channel colorimetric sensor array was developed based on their distinct differential catalytic and inhibitory properties. This array was further integrated with a portable smartphone RGB detection platform. Furthermore, it successfully distinguished commercial green tea beverages by leveraging their characteristic tea polyphenol profiles, thereby demonstrating its potential for practical nanozyme-based food analysis.
