Vitamin C (ascorbic acid and dehydroascorbic acid), crucial water-soluble micronutrient with strong antioxidant properties, serves as a co-factor for multiple enzymes. Its significant role in immune-regulation, collagen-synthesis, and iron-absorption makes it an essential diet component. Fresh fruits and vegetables are primary dietary sources of vitamin C, but its content is highly variable and sensitive to environmental and processing conditions.This review explores vitamin C in fruits and vegetables, discussing stability, analytical detection techniques, nutrient interactions, bioavailability, and public health implications. Advanced analytical techniques have improved the sensitivity and specificity of detecting ascorbic acid in food matrices, vitamin C is highly susceptible to degradation. Bioavailability of Vitamin C is influenced by food matrix and interactions with other nutrients, notably enhancing non-heme iron absorption and working synergistically with other antioxidants. Improved nutrient detection and understanding can aid in accurate nutritional assessment and public health strategies like food-to-food fortification, maximizing the health benefits of vitamin C-rich fruits and vegetables.
