Abstract:
The dense structure of egg yolk granules (EYG) limits their emulsification functionality. This study investigated interactions between EYG (1%) and egg lecithin (EL, 0-1%) under ultrasound-assisted pH-shifting. Results showed EL significantly enhanced complex solubility, increased negative Zeta potential, and reduced particle size (P < 0.05). Fourier transform infrared spectroscopy revealed increased β-sheet content and reduced random coils (P < 0.05), while intrinsic fluorescence indicated EL-induced quenching of EYG proteins. Molecular docking identified that EL bound to EYG proteins primarily by hydrogen bonds and hydrophobic interactions. At 0.5% EL, protein-phospholipid synergy formed viscoelastic interfacial layers and producing emulsions with small droplet size (9.55 μm), low creaming index (3.64%), and high interfacial protein coverage (57.13%). Conversely, exceeding 0.5% EL caused competitive adsorption, displacing proteins and weakening interfacial stability. This work provided novel mechanistic insights for rationally designing EYG-EL emulsifiers with tailored functionality.
