Abstract:
Potato flour serves as a comprehensive alternative to traditional starch, offering superior nutritional value and environmental sustainability. However, potato flour contains not only starch but also proteins and fibers. These components interact with starch and compete for water, which complicates starch gelatinization and the formation of a stable gel network, thereby limiting its consistency in food processing. The results showed that the degree of hydrolysis (DH) increased significantly from 6.4 % to 14.6 % as flavourzyme concentration rose from 0.1 % to 1.0 %, indicating enhanced protein degradation and peptide generation. Increasing flavourzyme concentration significantly reduced viscosity, suggesting that peptides produced from protein hydrolysis inhibit starch granule swelling and molecular crosslinking. Rheological analysis revealed that with higher enzyme concentrations, both the storage modulus and loss modulus decrease (from 400 to 75 Pa and from 101 to 18.4 Pa, respectively), while apparent viscosity declines from 479 to 75 Pa·s. Moisture distribution analyses further showed reduced bound water and increased free water mobility, confirming weakened starch/protein-water interactions. Scanning electron microscopy demonstrated that flavourzyme-treated gel structures become more porous and less compact. Flavourzyme treatment is attributed to the hydrolyzing high-molecular-weight proteins into small peptides. These peptides competitively bind to starch molecules, thereby inhibiting starch crosslinking, weakening protein networks, and reducing water-binding capacity. These findings offer insights into the modification of potato flour and provide theoretical support for its food processing application.
