Abstract:
Microencapsulation technology serves as a widely applied strategy to protect probiotics, which is associated with improved viability during delivery and potential targeted release. Among various techniques, the emulsion-based method is widely adopted due to its simplicity and scalability. Furthermore, studies suggest that co-encapsulating probiotics with hydrophobic bioactive compounds in emulsions may enhance their stability and activity through synergistic interactions. This review discusses the formation and characteristics of emulsion-based probiotic microcapsules, along with their mechanisms associated with enhanced heat resistance, freeze tolerance, storage stability, and digestive resistance. Additionally, it highlights the synergistic effects between probiotics and hydrophobic bioactive compounds during co-delivery, which may contribute to maintaining their bioactivity in vivo and potentially supporting health-related functions.
