ESDR/DNAzyme-based signal cascade amplification colorimetric aptamer sensor for detecting fumonisin B1 in cereal

Abstract:
Fumonisin B1 (FB1) is a water-soluble metabolite produced by various Fusarium species. It poses significant health risks to humans by contaminating cereal-based foods. Therefore, we propose a signal cascade amplified colorimetric aptasensor based on entropy-driven strand displacement reaction (ESDR)/DNAzyme for the rapid, quantitative detection of FB1 in cereal foods. This sensor demonstrates good specificity and repeatability. By using a smartphone to read the color data of the solution, the detection limit is 4.275 ng/mL, with a recovery rate of 89.9-112.88%. By measuring the absorbance, the sensor exhibited a detection limit of 0.14 ng/mL and a recovery rate ranging from 91.65% to 108.5%. This sensor is suitable for on-site detection and use in areas where resources are scarce. The recovery rates of these two methods are essentially the same as those of high-performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS). This provides a new platform for detecting trace amounts of FB1 in food.
