Abstract:
Highland barley has health benefits in managing metabolic disorders. The effects of steaming, baking, and extrusion on the nutritional components of whole highland barley, as well as its hypoglycemic and hypolipidemic effects, were investigated. Thermal processing significantly altered the physicochemical properties of β-glucan and polyphenols, with baking increasing β-glucan content (61.4%) and free polyphenol levels (28.8%) compared to raw barley. Regarding the impact of processing, the baked highland barley (BHB) group demonstrated the most significant metabolic benefits. BHB treatment resulted in significantly lower fasting blood glucose and serum total cholesterol levels compared to the steamed highland barley (SHB) group. Also, steamed barley promoted beneficial gut microbiota (e.g., a 35% increase in Bifidobacterium) and short-chain fatty acid production (e.g., a 28% increase in butyrate). These findings demonstrate that thermal processing, particularly baking, enhances the bioactivity of highland barley by improving β-glucan solubility and polyphenol release.
