Mounting environmental concerns over conventional plastic-based packaging have driven increasing research into sustainable alternatives. Recent advances have focused on developing chitosan-based active and intelligent packaging systems capable of both preserving food quality and providing real-time freshness monitoring. This review systematically summarized fabrication strategies, highlighting their advantages, limitations, and applications in food systems. Particular attention is paid to the functionalization of chitosan matrices with plant-based bioactive compounds such as polyphenols, essential oils, and natural colorants to enhance antimicrobial, antioxidant, UV-blocking, and ethylene-scavenging performance. Intelligent packaging applications based on pH- and gas-responsive indicators are also discussed, showcasing progress in real-time quality monitoring. The regulation of mechanical properties, controlled release behaviors, migration and safety assessment are analyzed. Key challenges related to production scalability and cost-effectiveness are discussed. Future perspectives emphasize the integration of advanced technologies with chitosan-based systems to optimize their properties, improve cost-effectiveness, and expand their commercial viability in food packaging applications.
