Nutritional reference values (NRV) are an essential tool in clinical nutrition and public health. They provide benchmarks for assessing dietary intake at the individual and population levels, to identify situations at risk of deficiency or excess and to guide nutritional interventions. New NRV have been available for Switzerland since 2022 and now constitute the national reference. This article presents the principles underlying NRV and illustrates their practical application in clinical practice and public health. Examples of applications are provided, particularly in relation with the assessment of dietary intake, focusing on three nutrients, and the development of nutritional recommendations.
