Influence of different yeast mannoprotein extracts on the evolution and stability of vitisins

Abstract:
In this study, the effects of eight mannoprotein-rich extracts obtained from Saccharomyces and non-Saccharomyces yeasts on vitisin formation and color evolution were evaluated in a model wine system. Results showed that the accumulation of A-type and B-type vitisins depended on the yeast extract added. The mechanism underlying this effect does not seem to involve a direct contribution of mannoprotein-rich extracts in the oxidative step of vitisin formation, but rather their role in the physicochemical stabilization of these pigments. Color evolution also varied depending on the extract added. In this way, nucleic acids present in the autolysates of S. cerevisiae, M. pulcherrima and T. delbrueckii may have acted as copigments with anthocyanins, although stabilization of the complexes was only achieved by the autolysate of M. pulcherrima. The enhanced accumulation of B-type vitisins in the presence of the P. kluyveri autolysate resulted in a faster evolution of the hue of this wine.
