Abstract:
Nanocellulose-based hydrogels have attracted increasing interest in food systems owing to their renewability, biodegradability, high specific surface area, and tunable surface chemistry. This review summarizes recent advances in bioinspired nanocellulose-based hydrogels, with emphasis on their structural design, multifunctional performance, and emerging applications in food preservation, intelligent packaging, 3D printing, and food purification/monitoring. Attention is given to how bioinspired strategies improve hydrogel responsiveness, adhesion, controlled release, and sensing functions. The review also discusses current barriers to industrial translation, including scalability, cost efficiency, reproducibility, and regulatory compliance. Overall, bioinspired nanocellulose-based hydrogels represent a promising platform for developing safer, smarter, and more sustainable food materials, although further progress is needed to align multifunctional performance with practical manufacturing and food-contact requirements.
