Abstract:
Reducing risk of food safety illnesses from consumption of meat remains a vital public health priority. Consequently, food safety inspection systems have transitioned toward risk-based, preventive methodologies that emphasize the identification, control, and elimination of hazards before product is distributed to consumers. Modern inspection systems that focus on preventive strategies are increasingly prioritized to address chemical, biological, and physical hazards. These systems integrate advanced monitoring and verification technologies, including artificial intelligence and real-time and rapid detection methods, to improve specificity, sensitivity, and speed of hazard identification and control within processing facilities. Through these improvements, verification and validation processes enhance accountability, ensuring consistent implementation of food safety standards, and supporting regulatory compliance across meat processing establishments and national boundaries. Combined use of modern inspection systems and cutting-edge analytical methodologies support proactive food safety management by allowing immediate identification and elimination of hazards. Overall, development of risk-based inspection systems, including the implementation of technological advancements, offers potential to improve meat safety, safeguard consumer health, and enhance effectiveness of modern food safety management in meat processing plants.
