Abstract:
Brazil has the planet's most significant biodiversity of edible fruits, associated with the vast diversity of its volatile organic constituents (VOCs), which are directly responsible for aromas, flavors, and therapeutic and technological potential. This review addresses limitations, trends, and distribution of studies on VOCs, in addition to reporting their chemical profiles, defined by principal component analysis (PCA) and hierarchical cluster analysis (HCA), and belonging to 14 families and 33 species of fruits distributed in the country. The variability in the chemical profiles of the fruits is reported according to the collection site, ripening time, and difference in the extraction method. The primary constituents identified in the volatile concentrates belong to the classes of monoterpenes (terpinolene, myrcene, δ-3-carene, limonene, α-pinene, β-pinene, sabinene, α-terpinene, linalool, (E)-β-ocimene and α-phellandrene) and sesquiterpenes (E)-β-caryophyllene, γ-muurolene, spathulenol, selina-1,3,7(11)-trien-8-one, selina-1,3,7(11)-trien-8-one epoxide, curzerene, and caryophyllene oxide.
