Abstract:
Golden pomfret (Trachinotus ovatus) is an important mariculture fish rich in unsaturated fatty acids, while the dynamic remodeling of lipid molecules during hot-air drying remains poorly understood. To thoroughly analyze the lipid composition and dynamic changes in golden pomfret dried under different durations, fatty acid profiles and lipid compositions were identified via GC-FID and UPLC-Q-TOF-MS. Multivariate analyses (OPLS-DA and pathway enrichment) revealed overall lipidomic differences across nine groups. A total of 31 fatty acids and 412 lipid species were identified, among which 123 differential lipids (VIP > 1) were screened. Total fatty acid content peaked at 8 h. The most prominent divergence occurred between the 8 h and 16 h groups, with 127 differential lipids mapped to eight pathways including linoleic and arachidonic acid metabolism. This study identifies 8 h as a critical transition point for lipid remodeling, providing molecular-level support for lipid quality control of dried golden pomfret products.
