Abstract:
This study explored the influences of dielectric barrier discharge low-temperature plasma (DBD-LTP) operating at 40 kHz for 10 min with different power on corn starch structures, physicochemical and functional properties. Structural analyses showed that DBD-LTP treatment maintained the A-type crystal structure of starch. However, the treatment decreased molecular chain order, relative crystallinity, and gelatinization temperature. Regarding functional properties, the 75 W treatment increased cold-water solubility over 3-fold, improved water-holding capacity by 21.4%, and enhanced gel hardness to 965.95 g. It also improved transparency and DPPH radical scavenging ability. Moderate power treatment reduced rapidly digestible starch and increased resistant starch content. Overall, 75 W DBD-LTP effectively optimizes starch physicochemical and functional properties with well-preserved granular integrity, offering theoretical support for starch non-thermal modification.
