Abstract:
To address the limited understanding regarding the quality characteristics and volatile flavor characteristics of co-pressing safflower seed and flaxseed oils, this study systematically investigated the optimization of the co-pressing technology and its effects on the flavor profile of the finished oil. Physicochemical indices and volatile compounds of single oilseed pressing, co-pressing and physically blending oils were analyzed under optimized conditions: baking temperature 140 °C, baking time 5 min 20 s, moisture content 6.8%, and barrel temperature 160 °C. Combining E-nose and HS-SPME-GC-MS with multivariate statistical analysis, the distribution patterns of key aromatic active compounds were accurately characterized. The study successfully identified 67 volatile substances and screened 10 key aroma-contributing compounds (including 1-octen-3-ol and five other substances with VIP > 1). Additionally, co-pressing oil lowered acid value and p-anisidine value by 12.5% and 79.1%, respectively, with other quality indicators also improved. These findings open new pathways for the development of functional oils and the value-added utilization of specialty oilseed resources.
