This pilot study assessed the FoodEx-LTCSp questionnaire for Hispanic nursing home residents. Findings suggest limited reliability for some aspects of food and service satisfaction in this population.
Area of Science:
- Gerontology
- Nutritional Science
- Health Services Research
Background:
- Hispanic older adults represent a growing demographic in nursing homes, yet their specific nutrition care needs are understudied.
- Chronic diseases are a primary driver for nursing home residency among this population, highlighting the importance of adequate nutrition.
- Existing food and food service satisfaction instruments may not adequately capture the experiences of Hispanic residents.
Purpose of the Study:
- To evaluate the internal consistency reliability of the Food Expectations-Long Term Care Spanish (FoodEx-LTCSp) questionnaire.
- To explore the relationships between food and food service satisfaction and key health indicators in Hispanic nursing home residents.
- To identify potential areas for improving nutrition care and satisfaction for this demographic.
Main Methods:
- A pilot study was conducted with Hispanic nursing home residents.
- The FoodEx-LTCSp questionnaire was administered to assess satisfaction with food and food services.
- Statistical analyses examined the reliability of questionnaire subscales and correlations with food intake, serum prealbumin, and functional status.
Main Results:
- Two subscales of the FoodEx-LTCSp, 'Cooking Good Food' and 'Providing Food Service,' demonstrated significant inter-correlation (r = 0.624, p = 0.002).
- No significant correlations were observed between serum prealbumin and food intake or functional status.
- No significant differences were found in the 'Enjoying Food,' 'Food Service,' or 'Exercising Choice' subscales.
Conclusions:
- The FoodEx-LTCSp questionnaire shows potential but requires further validation for use with Hispanic nursing home residents.
- Current measures of food and service satisfaction may not fully align with nutritional status or functional independence in this population.
- Further qualitative research is recommended to refine instruments and better understand the experiences of Hispanic older adults regarding food and nutrition in long-term care settings.
