Analysis of oligosaccharides in beer using MALDI-TOF-MS

This study optimized oligosaccharide analysis in beer using matrix-assisted laser desorption/ionisation time-of-flight mass spectrometry (MALDI-TOF-MS). The 2,6-dihydroxybenzoic acid (2,6-DHB) matrix with sodium chloride proved most effective for detecting beer oligosaccharides.
