Antioxidant Generation during Coffee Roasting: A Comparison and Interpretation from Three Complementary Assays

Coffee roasting increases antioxidant capacity, primarily due to melanoidins, not chlorogenic acids (CGAs). Three assays (Folin-Ciocalteu, ABTS, ORAC) assessed this change, showing increased antioxidant activity during roasting.
