Characterization of Pulse-Containing Cakes Using Sensory Evaluation and Instrumental Analysis

Incorporating pulses into cakes can improve nutrition, but off-flavors are a challenge. Chickpea and faba bean cakes showed potential, being most similar to control cakes and preferred by half of consumers.
