Optimization of Spirulina-Enriched Vegan Cake Formulation Using Response Surface Methodology

This study developed a vegan cake enriched with Spirulina (a nutrient-dense algae) to enhance its nutritional value. The optimized formulation resulted in a cake with improved protein, phenolic content, and antioxidant activity, offering a healthier vegan bakery option.
