Changing trends of non-volatile metabolites during industrial broad bean paste production via untargeted metabolomics

Abstract:
Based bean paste (BBP) is a popular fermented condiment. Previous researches mainly focused on the analysis of microbial community and flavor of BBP, however the information of non-volatile metabolic changes during industrial BBP fermentation is still unclear. Therefore, this study elaborated the composition and changing trends of non-volatile metabolites in BBP during industrial production through an untargeted metabolomics approach. 1992 non-volatile metabolites were identified in BBP. Integrated analysis using KEGG database demonstrated that amino acid metabolism (27.94 %) and secondary metabolite biosynthesis (14.29 %) served as the main metabolic pathways. In the initial-mid fermentation stage, carbohydrate metabolism and amino acids metabolism were greatly enriched while secondary metabolite synthesis metabolism dominated the mid-late stage. The differential metabolites were predicted through OPLS-DA and random forest analysis. Finally, a total of 75 metabolites with potential physiological functions were predicted and their changing trends were provided. The results could deepen our understanding of the composition and changing trends of metabolites in industrial BBP fermentation.
