Pulsed electric field-assisted fermentation enhances nutritional composition and bioactivity in wheat-based beverages

This study explores the effects of PEF on the fermentation performance and functional attributes of malted wheat beverages fermented by three wheat-derived lactic acid bacteria (LAB) strains: L. plantarum (Lp), P. pentosaceus (Pp), and P. acidilactici (Pa). Compared with conventional extraction, PEF significantly enhanced fermentation efficiency, accelerating LAB growth and acidification. The strongest effect was observed for L. plantarum, which reached a pH of 3.31 and produced 0.55% lactic acid after 24 h. PEF also reshaped the beverages' metabolic profile, influencing phenolics, organic acids, short-chain fatty acids, and mineral availability. Moreover, heavy metals decreased after fermentation. Antioxidant activity was highest in PEF-treated fermented beverages and correlated with phenolics, organic acids, and essential trace elements (Fe and Se). These findings reveal a previously underexplored synergy between PEF-induced matrix modification and LAB metabolism, highlighting PEF-assisted fermentation as a promising strategy to enhance the nutritional quality, bioactivity, and safety of wheat-based fermented beverages.
