Glutathione is a thiol tripeptide widely existing in animals, plants, and microorganisms, showing antioxidant and detoxifying functions. It is used in the multiple fields such as pharmaceuticals, food, cosmetics, and feed additives. In recent years, with the rapid development of green biomanufacturing, the industrial upgrading of glutathione production has become a research hotspot. This paper introduces the main physiological functions and application fields of glutathione and reviews the research progress in glutathione biosynthesis and industrialization. Furthermore, this paper summarizes the emerging technologies and processes of glutathione production, reviews the commercial development of glutathione, and proposes the future development directions, with the aim of facilitating the industrial upgrading and green development of glutathione.
