Optimization of Emulsifier and Stabilizer Concentrations in a Model Peanut-Based Beverage System: A Mixture Design

Optimizing beverage quality requires understanding stabilizers. This study found that a blend of 66% xanthan gum and 34% lecithin at 0.5% total usage best improved colloidal stability in peanut-based beverages.
