Music can alter taste perception, a phenomenon known as sonic seasoning. This study found that self-construal influences how music affects chocolate taste, enhancing sweetness ratings for milk chocolate under independent self-construal and dark chocolate under interdependent self-construal when paired with positive music.
Area of Science:
- Sensory Science
- Psychology
- Consumer Behavior
Background:
- Sonic seasoning demonstrates music's influence on taste perception.
- Self-construal (independent vs. interdependent) affects cognition and behavior.
- The moderating role of self-construal on sonic seasoning is not well understood.
Purpose of the Study:
- To investigate the moderating effect of self-construal priming on the sonic seasoning effect.
- To examine how emotional music influences taste perception based on self-construal.
- To explore the interaction between self-construal, music, and chocolate taste.
Main Methods:
- A mixed design experiment with 2 (self-construal: independent/interdependent) x 2 (chocolate: milk/dark) x 2 (music: positive/negative emotional) factors.
- Participants underwent self-construal priming before evaluating chocolate taste.
- Taste evaluations were compared while participants listened to positive or negative emotional music.
Main Results:
- Independent self-construal priming increased milk chocolate sweetness ratings with positive music (p=0.004).
- Interdependent self-construal priming increased dark chocolate sweetness ratings with positive music (p=0.001).
- Emotional music significantly altered taste perception depending on the type of self-construal.
Conclusions:
- Self-construal significantly moderates the sonic seasoning effect.
- Tailoring music to individuals' self-construal can enhance their food experience.
- Findings offer insights for improving sensory marketing and personalized dining experiences.
