Protein Digestibility and Anti-inflammatory Activity of Processed Whey Protein Ingredients for Infant Formula

Heat treatment improves the digestibility of skim-milk-derived whey protein concentrate (SPC) for infant formula. Both treated SPC and conventional whey protein concentrate (WPC) show similar anti-inflammatory bioactivity.
